Chocolate Peppermint Bark Cookies
Ingredients:
* 2 C all-purpose flour
* 1/4 t salt
* 1 C (2 sticks) unsalted butter, room temperature
* 1 C sugar
* 1 t vanilla extract
* 1 large egg yolk
* 6 oz. bittersweet or semisweet chocolate morsels
* 1/2 C crushed candy canes or candies
* 2 oz. white chocolate morsels
Instructions:
Spray a 13×9×2-inch baking pan with nonstick spray. Line the pan with wax paper.
Whisk the flour and salt in a medium bowl.
Using an electric mixer, beat the butter until creamy, about 2 minutes.
Slowly beat in the sugar until mixture is light and fluffy, about 3 minutes.
Beat in vanilla and egg.
Gradually add the flour mixture, beating on low speed, just until blended.
Press dough into pan and pierce with fork.
Back for 30 minutes at 350 (until light golden brown).
Immediately after removing from oven, cover with chocolate morsels. Spread over dough when morsels are melted.
Immediately cover with candy.
Microwave white chocolate morsels for 45 seconds, stir, and then microwave for another 30 seconds (or until melted).
Drizzle over cookies with fork.
Let cookies chill for 1 hour.
Cut into irregular pieces.
